Buffalo and Blue Cheese Chicken Salad

I have been gone for a long time, and I can't promise that it is going to get any better since I am due with our little boy 5 weeks from today! But I have had several people ask me why I haven't posted anything lately and so I thought I would post this really simple, really delicious chicken salad recipe. I know a ton of people who love the hot Buffalo and Chicken Dip (including my husband) during the winter but it is getting a little to hot for that. So this is a great summer recipe for those who love blue cheese, hot sauce, and chicken.



Buffalo and Blue Cheese Chicken Salad 
1/2 cup mayonnaise 
1/4 cup crumbled blue cheese
3 tablespoons  hot sauce
2 tablespoons bottled blue cheese salad dressing 
2 celery ribs,chopped fine
1 carrot, peeled and chopped fine 
5 cups cooked, chicken breasts
Salt and pepper

Combine mayonnaise, cheese, hot sauce, dressing, celery, and carrot in large bowl. Add chicken and toss until coated. Season with salt and pepper. Serve or cover and refrigerate for up to 2 days.

*I like to roast bone in skin on chicken seasoned with salt and pepper at 425 for 30 to 45 minutes until done. Then use this chicken for my chicken salad it tastes so much better than boiled chicken.
